El Chaflán is a sleek and modern Madrid restaurant with a fantastic menu and top class bodega. The restaurant decor is minimalist to say the least, with walls and floors in a uniform shade of silvery grey-green, tables with pure white linens and a solitary large olive tree set amongst the tables pointing up to a large skylight which allows the daylight to flood through. The kitchen is immense and gleaming in stainless steel and can be seen through a large glass screen. Observe hot new chef Juan Pablo Felipe Pablado prepare the most amazing dishes such as duck liver on a tartar of cabbage, pigeon with mini meatballs and a sweetcorn foam, red tuna with tomato confit and vegetable cous cous or roast suckling pig with apple and vanilla puree. Particular mention must be made of the cheese course - possibly the most original in Madrid. Pieces of five different Spanish cheeses are arranged graphically on a square, white plate along with the various items with which they are to be eaten: mini-biscuits, quince preserve, nuts, a dribble of sweet Muscat sauce. As a design it is almost too beautiful to eat. El Chaflán has one of the best bodegas in Madrid, with over 600 varieties to choose from. The wine list is split into 4 sections-red, white, world wines and dessert wines. A top 7 is listed on each section to assist you in your choice. Don’t forget to try one of the fantastic cocktails on offer too; the restaurant has a unique cocktail station where old classics are reinvented to add a great compliment to your meal.
